First Christmas Lunch!

Over the weekend we got to enjoy a nice family lunch with my husbands side for Christmas.

It was the first year all the family was together. Most years we've had disjointed lunches with one family member, then another etc so it was great for the spirit of Christmas to have one big lunch with everyone.

As usual my mother-in-law put on a huge spread with ham, turkey, pork, prawns, salad and roast veggies. She always goes to so much effort!

My son Samuel got to enjoy his first ever Christmas lunch! He had a ball eating lots of finger foods including some yorkshire pud and turkey. He is such a little piggy!

I made a caramel slice and a mars bar slice for dessert which turned out pretty well considering I only quickly made them the day before.

Here's the Mars Bar slice - looks a bit rough but it tasted awesome!


Here's my recipe:

Utensils: 
Mixing spoon
Small Saucepan
Lamington Tray
Baking Paper (or grease tray)

Equipment:
Stove Top
Fridge

Ingredients:
3 Mars Bars
90g Butter
3 cups rice bubbles

For chocolate topping:
1 packet of Nestle dark choc melts (you can use milk choc instead)
30g butter

Method: 
Put rice bubbles in mixing bowl
In a small saucepan on the stove: 
melt the mars bars and butter
make sure it is on a low heat and stir continuously
Once melted pour immediately over rice bubbles and stir quickly
Press the mixture into a lined or greased lamington pan

For topping:
Melt choc melts and butter in a small saucepan 
Again over a low heat and stir continuously 
Once melted pour over mars bar/rice bubble mixture in lamington tin

Put in fridge.
